Happy Thursday. I wasn’t intending to send out so many newsletters this week, but hopefully you enjoy getting little bits of recipe inspo throughout the week.
I’ve been trying to cook through my cupboard before adding anything new. I have a really bad habit of buying every grain and legume and pasta under the sun, using half of it, and then forgetting about it. Since I came to the harrowing realization that my jar of bag clips is not infinite, I have decided that I must cook through everything in my cupboard if for no other reason than I need to reclaim my bag clips.
New Recipe: Easy Chicken and Red Lentils
For some reason, a little half-used bag of red lentils stuffed away in the corner of my cupboard has been burning a hole in my pocket. Because I only had one cup remaining, I hadn’t been able to think of a good way to use them until this chicken and red lentil stew popped into my life. It’s really, really good. And shockingly simple. That’s the best part, really. Sometimes, I still find myself counting through the number of ingredients on my fingers and thinking, “Wow, I can’t believe it tastes that good.”
Similar to many of my other recipes, this dish is developed to be forgiving. While the triad of herbs–parsley, oregano, and dill–work beautifully together, you can kick any of them out of the band as you need to. No ground chicken? Try it with a chopped-up rotisserie chicken. While the Greek yogurt adds a nice creaminess, you can skip it and enjoy the stew on its own.
