Happy New Year!
Like many of you, I’ve started thinking about New Year’s resolutions. One of my resolutions is to participate in Veganuary, a global campaign that encourages people to try out a plant-based lifestyle for the month of January.
Since I’m participating in it, I thought I would go ahead and make it easier for you to try it out too! Whether you do the full month or just a week in January, I hope you’ll find this mini-meal plan helpful.
