I have been cooking and baking up a storm. I’ve been trying to perfect my blueberry upside-down cake recipe, and I feel like I finally landed on the winner, and I’m so happy! I’ve made this cake probably 8 times, and felt like I was losing my mind each time. I just really wanted a blueberry, almond, lemon cake situation, and I feel like I finally got it! Yippee!
I’ve been feeling so inspired lately, and I have so many more ideas that I can’t wait to play with this weekend. For now, let’s dig into the recipes to keep you cooking the rest of the week.

Lemon-Blueberry Upside-Down Cake
The cake that drove me to the edges of my sanity! I’ve been working on this recipe since July, and I think I even shared a version of it here before, but I felt like it still wasn’t right. I took it down and went back to the drawing board (several more times). I am finally so, so happy with it! Even though the almonds soften slightly as they bake, they still offer a nice textural contrast to the blueberries. And the lemon cake is unapologetically lemony, which I love.
Cheesy Turkey and Rice with Beans
This is one of my go-to meals that I visit and remix often. It’s so adaptable to almost anything you want to add or swap. It’s spicy, comforting, and has just the right amount of ooey-gooey cheesiness. YUM!
Shrimp Corn Chowder
No cream, no roux. This chowder gets its richness and thickness from homemade shrimp stock and lightly mashed potatoes as they cook in the broth. It’s savory, just a little spicy, and the corn adds just the right amount of subtle sweetness.
