Happy Wednesday. Today’s newsletter is better late than never! I have a new recipe and a few ideas to inspire your meal plans for the week.
Midweek Update
I’m really enjoying spring produce! I tried my hand at a rhubarb upside-down cake yesterday (a tasty disaster), and I can’t stop eating radish Caesar salads (recipe soon). I also made a riff on my Italian turkey meatballs last night (using chicken instead; recipe below), which were incredible! Today, I’m finally sharing my take on a mango upside-down cake. Mango has been a frequently requested fruit to showcase, so I’m happy to finally have this cake to share with you. I pair it with an outrageous salted coconut caramel.
Tomorrow, I’m going to my friend’s house, and she’s going to fire up the grill for a Korean BBQ night. I’m making cheese tteokbokki, and I’m also bringing along a black sesame cake (right side up, this time), but I’m trying to figure out what frosting to make for it. I’m torn between a toasted rice buttercream and a strawberry buttercream. Decisions, decisions!
