Happy Wednesday. Today, I have reader faves and a few from the archives to inspire your recipes for the week.
Midweek Update
This week, I’ve been working on perfecting my upside-down carrot cake, and we are SO close. It’s unbelievable how delicious it is, and I can’t stop obsessing over it. The carrot jam is delicious, and I’m pairing it with a cinnamon vanilla caramel. I added a cream cheese “swirl” layer to the cake, which is just perfection.
Tonight, I want to make it again but use paper-thin slices of carrots to see what a scale design might look like, but I suspect I’m going to prefer the carrot jam, but we will see!
