Happy Wednesday. Today, I have a new recipe, a few reader faves, plus a few from the archives to inspire your meals for the rest of the week.
Midweek Update
I continue to be amazed at how busy I’ve been since I quit my job! I’ve been cooking and baking a lot, and I’m really happy to be finding my rhythm of new recipe development. Yesterday, I tested more iterations of my sweet potato and tofu soba, and I’m very happy to share the recipe with you below! I’ve also been working on a blistered shishito pepper recipe now that I know how well my little air fryer oven can broil! I blister them and serve them with an amazing tangy shichimi togarashi and charred scallion vinaigrette. They’re finished with crispy shallots and make a perfect side dish or appetizer!
Tonight, I’m going out to eat for happy hour with my friend, and then I’ll be joining Andrea Marcellus’s live event. Andrea was the coach I hired who helped me lose over 70 pounds on her Shape Up Mind & Body Program. It was definitely life-changing for me, so I’ll be happy to talk about my experience in her program. If you’re curious about it, you can register for the free event here. Love the idea of that charred scallion vinaigrette! The way you describe iterating on the soba recipe reminds me of my own kitchen experiments—sometimes it takes a few rounds to get the flavors just right. That shishito pepper dish sounds incredible, andthe charred scallion element is such a smart way to add depth without overwhelming the dish. Really excited to see that recpe when you share it!
