Midweek Meals
New recipe + updated recipe + reader faves 🌞
Happy Wednesday. Today, I have a new recipe, an updated recipe, reader faves, and some ideas from the archives to share with you.
Midweek Update
It’s been a busy week so far! I’ve been baking and cooking and doing all sorts of things. Yesterday, I updated my recipe for my vanilla cupcakes, and I made my Harissa Chicken Meatball Salad (recipe below). It’s such an amazing and big salad full of so many flavors and textures. I love it! I was really hoping to share my final recipe for my Banana Cocoa Pebbles Upside-Down Cake (now called the Grammy Bananny Upside-Down Cake), but I feel like I want to make it one more time to make sure it’s perfect. I think it will be in the newsletter on Sunday!
This weekend, my parents are coming down for a crab feast (and I bought matching shirts; I can’t wait to show them to you).
One goal I have is to continue working through my old recipes, reshooting them and tweaking them to make sure they are consistent, since I am not the same recipe developer that I was 7 or 8 years ago! This week, I’m going to try to reshoot my Chicken in Creamy Caperberry Sauce.
For now, let’s get into some recipes to keep you cooking the rest of the week.
NEW RECIPE
Harissa Chicken Meatball Salad
Spicy, smoky harissa chicken meatballs are piled on top of a crisp salad with a harissa-honey dressing and a crunchy, tangy pistachio-sumac garnish. A labor of love, but a salad that’s worth the effort!
UPDATED RECIPE
Vanilla Cupcakes with Lemon Buttercream
Thank you, Malone! You inspired me to revisit this recipe to reshoot it and get all my volume measurements into weights as well. The next step will be modifying it for a cake because this vanilla cake is truly divine!

Charred Broccoli and Chicken Orzo
This cheesy charred broccoli and chicken orzo is an easy, cacio-e-pepe-adjacent pasta recipe you’ll love on a weeknight. It’s peppery and cheesy and has a touch of brininess from capers.
