Happy Thursday! What a busy week! Iโm starting to wrap up my St. Patrickโs Day recipes, and yesterday, we had our annual feast with my homemade corned beef!

Iโll be sharing my recipe this Sunday to give you enough time to try curing your own brisket in time for St. Patrickโs Day if youโre up for the challenge!
I also made mint chocolate chip cupcakes and Irish cream cupcakes (made with my homemade Irish cream!). I have so many new recipes for the holiday to share this weekend. I canโt wait to get them all out to you! Iโm starting to collect all my St. Patrickโs Day recipes here if you want a sneak peek.
For now, I have a few reader faves to share with you to keep you cooking for the rest of the week.
Chicken with Stewed Sweet Peppers
Woohoo! So thrilled you enjoyed this. Itโs perfect for a midweek meal but brings a great complex sweet, smoky, aromatic flavor.
One-Pot Cod with Pearl Couscous
Thank you so much, E! Love that this is a staple for you - the cod is so buttery and flaky and works so well with salty olives. YUM!
Creamy Sun-Dried Tomato Chicken Soup
Wow, thanks for the pro tip, Mike! I never would have considered using a broccoli and cheese base for this soup, but I bet it was delicious!! Iโm so happy you enjoyed it!
Irish Guinness Beef Stew with Prunes
Thank you for the 5-star rating! This beef stew has the perfect sweetness from prunes that melt into the stew. A perfect St. Patrickโs Day dinner!!
Short and sweet this week. Iโll be back in your inbox on Sunday with all the St. Patrickโs Day recipes to help you create a festive and delicious holiday spread. If you make one of my recipes, please drop a comment to let me know how it turns out; Iโd love to hear from you. Byeeeeee! ๐๐
