Happy Tuesday. I hope everyoneโs week is off to a good start, that all your boring work meetings have been canceled, and that youโre eating only the most delicious food because thatโs all we really want in life, right?
There was a period in time a few years ago when I got really serious about video recipes. Because they were so time-consuming, I often didnโt post the written instructions on my website. A few days ago, I found one of these old recipes, and to say I was shocked that it never made it to my site would be a gross understatement.
Enter the caramelized onion rigatoni. The rigatoni is piled high atop sage-infused whipped ricotta. Itโs finished with a dusting of crushed pistachios and crumbled-up crispy sage. Like I genuinely cannot believe this massive oversight on my part that a recipe this iconic, this lush, and this DELICIOUS never made it to the site.
Iโm here to correct that and to make sure you get this beauty in your inbox. When I posted it originally, it got rave reviews, like these:
All that to say, I think youโre going to love this dish. Itโs perfect for fall, and it looks stunning on a plate.
Caramelized Onion Rigatoni
This caramelized onion rigatoni is served on top of a creamy, sage-infused whipped ricotta for a dreamy dinner everyone will love.
Thatโs all I have for this sunny Tuesday. I hope you all have a great rest of your week and happy cooking!

Oof, my heart. I need to make this. What a gorgeous dish. I think I have added pretty much every recipe to my "to cook" list that started with caramelized onions ๐คค๐
