Happy Friday. I survived my first week back to work after PTO, but barely. The only thing that got me through was this hearty chicken stew. It’s one of those meals that make you look forward to leftovers, and it’s as easy as anything to throw together.
The inspiration for this was the chicken paprikash I had in Budapest. I didn’t have all the ingredients to make a true paprikash, so this was more of a subtle nod.
In Baltimore, tomorrow is supposed to be rainy and dreary. If that’s your weather forecast too, this chicken stew would be the perfect cure for any cold weather blues you may experience this weekend.
