Happy Wednesday. Believe it or not, I used to be extremely averse to leftovers. It was something I would eat begrudgingly, but I really struggled with them. I’ve since turned a corner, a new leaf, or have just become a transformed woman because leftovers really don’t bother me much anymore. In fact, I’m having a lot of fun embracing the challenge of transforming yesterday’s dinner into something different that doesn’t feel like a leftover night.
Regardless, I mentioned I made my very popular baked sun-dried tomato chicken (thank you for your wonderful feedback, Wendy!), and I had fun transforming it into chicken wraps one night and then a beautiful pearl couscous with mushrooms the next night. Don’t ask me why I thought I needed to make 5 pounds of chicken for four people…but I still have leftovers to work through!
