Happy Thursday. I hope everyone is having a great week so far. Today, I have two new recipes to share. The first is a comforting shredded chicken ragù, and the second is a curry rice flake noodle recipe. Both are delicious and easy to make.
The ragù is a bit time-intensive, but most of the time is inactive. It’s just as comforting as my pork and beef ragù, but so much quicker to make.
The curry rice flake noodles are so darn good and so quick to throw together. If you can’t find rice flake noodles, you can serve the curry over cooked white rice or cooked rice noodles.
I’ve gotten so much great feedback on my recipes this week that I included a roundup of reader favorites at the bottom of the post, so make sure you scroll down to see what people are loving!
Shredded Chicken Ragù
Bone-in, skin-on chicken thighs make this ragù rich and hearty. If you have a Parmesan rind, make sure you throw it in the sauce! If you aren’t saving Parmesan rinds, check out my post on why you should never throw them away!
We’re still in tomato season, so if you have an abundance of summer tomatoes, feel free to blanch them and crush them by hand for the sauce, as I did. Otherwise, use a can of crushed tomatoes for an even easier dinner recipe.
Curry Rice Flake Noodles
This recipe for curry rice flake noodles is one you want to have in your weeknight rotation. It’s a spicy, rich, fragrant vegan dinner recipe that everyone will love.
Cracking the coconut results in the richest curry ever, so if you’ve never tried the method before, now’s your chance!
Recipes readers have been loving:
I’ve gotten so much wonderful feedback the past week on so many recipes! Below are a few recipes people have REALLY loved, so make sure you add these recipes to your meal plan soon!
My Favorite Pork Tenderloin Recipe
This is my favorite pork tenderloin recipe ever (and if you’re like the commenter above, I think it’ll be your new favorite pork tenderloin recipe too). Served with ricotta mashed potatoes, spinach, and caramelized shallots, it’s a meal that looks stunning and tastes delicious.
Gochujang Beef and Broccoli
This recipe takes just 40 minutes to go from cutting board to table, so what’s not to love? Plus, it’s as versatile as anything. Swap out proteins, customize your toppings, or serve it with noodles instead of rice if that’s your jam. The world is your oyster.
One-Pot Chickpeas and Rice
This one-pot chickpeas and rice is another easy dinner recipe that goes light on effort but big on flavor. You’ll love how fast it comes together with just a few ingredients to prep!
Stewed Chickpeas and Ground Meat
This recipe is like a cult classic on my website. Don’t ask me why, but for some reason, I never expected it to get as popular as it did; probably because the photo wasn’t my favorite. I knew the recipe was delicious, but we are always our own worst critic. Needless to say, people LOVE this recipe as much as I did (which means it may be due for a brand new photoshoot 📸). You’ll love how fragrant, aromatic, and easy to make this velvety stewed chickpea recipe is!
Okay, that’s all for now! I hope everyone has a wonderful week (and weekend) filled with lots of tasty food.
