Happy Monday. I hope everyone’s week is off to a good start! I’m here to make it just a little better with two dinner recipes you should make this week.
The first is a ginger beef stir-fry. The beef is so tender, the sauce is so thick and velvety, and the veggies, well, there are lots of them, and they’re tender-crisp. What more could you want? How about lots of aromatics, including just a little spiciness, lots of garlic and scallions, and plenty of fragrant ginger? If I’ve hooked you with my sales pitch, run—don’t walk—to my post and make this stir-fry ASAP. You’ll thank me later!
The second recipe is one I developed five years ago (almost to the day!), and it remains one of my favorite end-of-summer dinner recipes. It’s a beautiful summery, tomatoey shrimp and orzo. If you’re like me and bought tomatoes over the weekend like it would be the last time you ever saw one, don’t miss this recipe.
Ginger Beef Stir-Fry
This ginger beef stir-fry is filled to the brim with tender beef, velvety sauce, and tons of tender-crisp veggies. It makes for a perfect weeknight dinner.
Summer Orzo with Shrimp and Basil
This is the perfect ‘nearing the end of summer’ recipe! This summer orzo with shrimp and basil combines all of late summer’s best flavors in a delicious, easy-to-prepare dinner that everyone will love.
What’s your favorite late summer recipe? How are you eating all your tomatoes right now? I have a GIANT bowl and a big loaf of bread, so you know tomato sandwiches are on repeat until I’m through every last one. 🍅
Hope you all have a great week ahead filled with lots of tasty food.
