Happy Sunday. I was hoping to come to your inbox with lots of new recipes, but this week has just been so busy that I needed to take a little break from recipe development. I have a few reader favorites to share with you from the past week, and I’ll show you the recipes that are currently in the works.
This week has been slow and fast at the same time. I received a promotion at my job! My new title is Design Director, so I’m feeling really proud but also a little overwhelmed. I know I’ll figure out how to navigate my new responsibilities!
Remember a million years ago, I told you all I was finally doing a photo shoot to get new headshots? Well, unfortunately, I developed a monster pimple–one so large even Photoshop couldn’t fix it–so I had to cancel. But the photo shoot finally happened yesterday!
This was a really big deal for me because it marked the end of my weight loss journey. If you’ve been following me on Instagram, you know I’ve lost over 70 pounds on Andrea Marcellus’ program since September. I wanted the photo shoot to be the sort of end of one chapter and the beginning of the next. One of my best friends, Emmy, did my hair and makeup. How great is it to have a friend who just rolls up, no questions asked, and volunteers their time to make sure you feel beautiful? Especially because I am hopeless when it comes to hair and makeup! At any rate, I’m really excited to see how the photos turn out. I’ll be sure to share them.
We also are planning on doing more creative food photo shoots in the future. I really want to get better at documenting my food adventures, and I think it will help to have someone else behind the camera!
Earlier in the week, I went to Mayo Beach Park with my neighbor. It was the first time I’d been to the beach in years, so it was really nice to slow down and just lounge around on the beach. I’m never too keen to go into the water. Usually, I’ll go about pinky toe deep, and then something rubs against my foot, and it freaks me out, so I retreat immediately.
I used this picnic basket I bought on Amazon, and it is honestly one of my favorite purchases right now. It made packing up really easy. We decided to have a baguette beach day, so I brought a baguette, ham, Swiss cheese, Dijon mustard, baby arugula, and jamón Serrano to make little sandwiches on the beach. I also brought cornichons, and we had them with non-alcoholic cocktails and watermelon.
Reader Favorites
Chickpeas in Lemon-Tahini Broth
Thank you so much, anonymous reader! This one is SO good, and it’s really perfect for meal prep. Make a batch tonight for lunches this week.
Chicken Katsu Udon Soup Recipe
This soup is always a hit; the chicken cutlets are so crisp and pair perfectly with the light, savory broth and bouncy udon!
Easy Cherry Crumble
Thank you so much, Carmen! I’m so happy you enjoyed this one. The turbinado sugar is the best part of this recipe for me, too–I just love a crunchy dessert topping!
Cheesy Pork Cutlets
Thank you so much, Carl! So happy this was a hit. I absolutely cannot get enough of little pork chops for quick dinners, but when they’re lightly breaded and topped with melty cheese…TOO GOOD.
My Favorite London Broil Recipe
Am I allowed to be considered a reader? Because I haven’t been able to get enough of this reverse sear London broil recipe! I’m actually about to put another one in the oven right now. I’ll usually make a two- or three-pounder, and then the next day, I’ll make wraps with tzatziki and vegetables. It’s so delicious!
Recipes in the works
These are the recipes that are currently in development! I am going to continue testing the recipes this week. The first is a beautiful Chinese eggplant and shiitake mushroom soba. The second is Malaysian curry glazed crispy tofu noodle bowls. I used my favorite Grumpy Ginger Malaysian Curry Paste, so I recommend grabbing a jar so you’ll have it in time for when the recipe drops!
I’ll also have a new recipe for a ridiculously easy chickpea orzo. It’s a great pantry dinner that you can throw together at record speed. Finally, I’ll have a recipe for what I consider to be my very best chicken noodle soup. I actually made this for Emmy a few weeks ago when she got sick, and she agrees that it is indeed the best. So you know it’s going to be good!
WHEW. It’s been a whirlwind. I feel like I have a lot of things to still update you on, but I’ll have to include them in the next newsletter. I hope everyone has a wonderful week filled with lots of tasty food. If you make one of my recipes, be sure to drop me a comment to let me know how it turns out. I truly love to hear from you. That’s all for now…byeeeeeeeee! 💖
