Happy Sunday and Happy Mother’s Day!
Weekend Update
WHEW. Last week was a whirlwind. For those who don’t know, Tried & True isn’t my full-time job (though sometimes, I wish it could be!). I just moonlight as a food blogger, but I’m a design director for an ed tech company during the day. This can be challenging when work picks up because it makes it harder to balance two food blogs and a demanding day job.
Last week was one of those weeks. To finish a very big project, I was working until midnight or 2 AM every single day, and I met my deadline with just 10 minutes to spare. While I’m on the off-ramp of the project, this first half of this week will be a bit busier as we tie up loose ends. Then, it’ll be back to cooking regularly for me!
The past week was just so much pizza and shoveling whatever fast and easy food I could into my mouth. The pic above is from yesterday’s dinner at our favorite Thai restaurant in Baltimore, The Dara! I had a veggie pad Thai and it was exactly what I needed!
Last Sunday, though, I made a big batch of my Mom’s chicken corn soup, and I ended up eating that for leftovers for the first half of the week.
It was fortuitous with the timing of Mother’s Day because I shared the recipe again on Reddit and Imgur, and everyone was so excited for it! Multiple people made it and said it was exactly the kind of comfort they needed. Given that I was also in need of Mama’s comfort food last week, and the timing of Mother’s Day today, I thought I’d share this recipe with you all.
The picture above cracked me up. The pot was SO hot and so HEAVY, and Jason captured me right when I was about to lose it, haha.
Anyway, I have that recipe plus a couple more to share with you all to keep you cooking this week. I’m desperately looking forward to getting back into my kitchen, so I can finally take the pizza shop off speed dial. 😜
