Happy Sunday. Today, I have a new recipe plus a few reader faves and St. Patrick’s Day recipes to keep you cooking this week.


Weekend Update
It’s been a very busy week (and weekend!) of baking and cooking! I’ve updated nearly all of my St. Patrick’s Day baking recipes to include weight measurements in addition to volume, so I’ve been up to my ears in St. Patrick’s Day treats (not a bad problem to have), like my Guinness Cupcakes with Irish Cream Frosting and my St. Patrick’s Day Trifle (recipes below)!
I also reshot my shredded beef and cheesy grits and was able to donate it to our local community fridge last week, so I felt great about that.
My biggest win is my Shamrock Shake Upside-Down Cake! If you’ve been following me on TikTok or Instagram, you know that cake nearly drove me into lunacy. I just could NOT get it right despite having a very clear vision of what I wanted it to be. But, I’m so, so excited to be able to share a FINISHED recipe for you just in time for St. Patrick’s Day! It’s such a fun and festive cake, and I hope that if you decide to make it, you’ll love it as much as I did.
Next week, I’ll be having my friends over for St. Patrick’s Day to enjoy my homemade corned beef and cabbage, and I’m also going to Medieval Times later in the week. I’m trying to decide if I should dress up or not. Hmmm!
