Happy Sunday. Today, I have a new recipe plus reader faves to inspire your meals for the week ahead.
Weekend Update
Last week was busy, and I am definitely feeling the effects of it this weekend! All I want to do is sleep, and the rainy, cold weather isn’t helping much. I’ve been working with my friend to help her launch a fragrance bar in Baltimore, and we did a really fun photoshoot (including an upside-down cake!) on Thursday. We’ll soon be launching the website (and an extra sweet special promotion), and I can’t wait to share everything with you when it’s ready!
Today, I’m going to try my hand at a banana Biscoff upside-down cake. I really want to do it with the espresso caramel, but we’ll see how I’m feeling. I’m also making another Caesar salad for dinner. I’ve been hyperfixated on Caesar salads with LOTS of radishes. It’s my absolute favorite, especially with a homemade Caesar dressing. Divine.

Pineapple Ritz Cracker Upside-Down Cake
This cake already has a fan club! It’s been made several times by friends in the Baking Baddies channel, and I’m so happy that people are loving it as much as I am. One reader already made it twice because it was such a hit in their house. Featuring a crisp, salty, sweet layer of Ritz crackers and nuts, a layer of crushed pineapple, and a moist pineapple-coconut cake, it’s a dessert you’ll want all summer long. Don’t skip that irresistible whipped coconut mascarpone!
