Weekend Update
Honestly, not too many updates–I’ve just been up to my ears in Irish recipes like my homemade corned beef and those adorable Shamrock Shake cupcakes! I’ve been working on this corned beef recipe for over three years, and I’m really proud of it and so happy to finally share it with you.

Homemade Corned Beef
The star of the show! If you can believe it, I’m making another one this week because we had NO leftovers from the one I just made! Now, you do have some time to start your brine, but I recommend getting the brisket going by early tomorrow to ensure you can get a solid 6 days of brining since you’ll need to cook the beef on the 17th. You can wait until Tuesday to start, but it’s better to get it started earlier rather than later.
