Happy Sunday. Today, I’m visiting with two “new” old recipes.
The first is a pork tenderloin recipe that I developed six (!!) years ago. It received rave reviews, like this one:
The second is a gorgeous vegan recipe that will be perfect for dinner on Meatless Monday tomorrow.
My Favorite Pork Tenderloin Recipe
I’ve thought about this pork tenderloin off and on for the past six years because it’s one of my very early recipes. I finally decided it deserved a reintroduction with a better photo, so here we are.
The pork is served on ricotta mashed potatoes with spinach, a buttery pan sauce, and it’s finished with crispy pancetta (or prosciutto or even bacon, if you prefer), and caramelized shallots. Don’t skip the pancetta and caramelized shallots: they add a nice sweet and salty finish with just a little bit of extra richness that works perfectly with the super lean pork tenderloin.

One-Pot Chickpeas and Rice
This one-pot chickpeas and rice recipe was a reader favorite over on
, so I decided that it deserved a spot on Tried & True too.I like to call this the procrastinator’s risotto. It’s certainly not a traditional risotto since you don’t stir or slowly incorporate the water into the rice as it cooks. It’s more akin to a creamy, thick rice soup but with a little less babysitting. Best of all, you only need a handful of ingredients and about 40 minutes from start to finish.
That’s it for this week! I hope everyone has a wonderful week with lots of tasty food. If you make anything from my blog, be sure to drop me a note to let me know how you liked it! I love getting your comments on my recipes!
