Happy Sunday. I hope everyone is having a relaxing weekend. This weekend was fairly low-key for me. I did lots of Pilates and soaked up some beautiful weather yesterday.
My local park planted really beautiful flowers, so I hung out there for a while. Too bad I always look so pained when I smile! Wherever you are, I hope you are getting to enjoy some beautiful spring weather and beautiful flowers!
This newsletter is about another one of my favorite spring things: ramps! If you find yourself with a bundle of these beautiful wild alliums, I have a new recipe for you, plus a few recipes from the past. I am also sharing a few reader favorites at the end of the post.
New Recipe
Easy Ramp Pasta
This ramp pasta is chock full of the good stuff: zucchini, ramps, tomatoes, chickpeas. All the things! I let the ramps sing in this dish by not adding too many other competing flavors. As a side note, I also used this post to wax poetic about my feelings on the over-harvesting of ramps…so if you’re interested, give it a read! And, if you don’t have ramps, I offer lots of substitution suggestions so you can make this recipe with or without them.
