Weekend Update
This weekend was so relaxing! On Friday, I decided not to cook; instead, we went out for a prix fixe dinner. We normally love this restaurant, but the vibes were off on Friday, which was disappointing. It ended up being really expensive, took nearly 3 hours, and the food was just off. Have you ever tried to go out to eat to save yourself the trouble of cooking, only to wish you’d just stayed home and made dinner? That’s how it felt. It was still fun to get dressed up for a date night, but I wish the restaurant lived up to their usually good record. Oh well!
This weekend, I also made my chicken and black bean chili (recipe linked below), and I got to spend time with my neighbor’s adorable fur-babies, Vinny and Priscilla, while she got engaged in New York City! Today, I made my air-fried Buffalo chicken tenders for the Buffalo Bills game, which I’m watching as I type this newsletter (recipe linked below)!
That’s about it for this weekend. Next week, I only have to work 3 days before I’m off until January! Woot woot!

Cheesy Veggie Pasta
I’ve made this several times because I just can’t get enough of it! It started as a recipe to use up my scrappy little odds and ends of pasta, so I’ve made it with a random mix of pastas in addition to just elbows. It’s cheesy, easy, and soooooo delicious. It would pair perfectly with my baked sun-dried tomato chicken (linked below)!

This chicken and black bean chili is so perfect for a cold night and easy to throw together! It’s especially delicious with freshly grated pepperjack cheese. Yum!
