Happy Sunday. Today, I have a new recipe and reader faves to keep you cooking this week.


Weekend Update
Another weekend has flown by! Yesterday, my parents came to visit, and we went out for sushi. I also made my Cherry Garcia Upside-Down Cake (recipe linked below), and naturally, my dad had to star in the cake flip video. They loved the cake, and so did I! A perfect dessert to welcome spring.
On Friday, I made my Steak Fajitas (linked below), and it really hit the spot. I feel like I may be entering a fajita fixation, and that’s all I’m going to want to eat for every meal. Earlier in the week, I made my favorite “gloop” meal. I love a gloop dinner. Maybe that’s not the best way to describe it, but sometimes you just want something porridgey, gloopy, and comforting. On those nights, my Herby Bean Stew will do the trick. It’s linked below.
Today, I met a friend for coffee, and I’ll be working on my upside-down carrot cake recipe. My goal is to be able to send you the recipe on Wednesday. It’s so delicious! I’ve decided that the premise of this cake will be cinnamon caramel, carrot-cardamom jam, a spiced walnut cake with cream cheese swirl, and it’ll be finished with a few small dollops of fresh whipped cream. YUM.

Steak Fajitas
I made my steak fajitas with a flat iron steak, and it was absolutely incredible! A perfect recipe to add to your rotation this week. You can go as big with this meal as you want. No time for the mango salsa? Skip it. No potatoes? Serve with rice instead. As long as you have the juicy steak, the flavorful onions and peppers, and a few tortillas, you’ll be set.

One-Pot Cod with Pearl Couscous
