Weekend Update
Last week was absolutely outrageously busy, and it occurred to me yesterday that I didnāt even send out a Wednesday newsletter! Oops! To be fair, on Wednesday, I was at the car dealership and we finally came home with our new car! After 7 years without a car, Iām really excited about the opportunity Iāll have to take short weekend trips and just expand my area of exploration.
I didnāt cook too much last week. We did pizza (twice) and then had sushi on Friday! I did make an amazing dry brined turkey breast and I used the leftovers to make a comforting turkey mushroom Swiss baked rice (recipe soon).
Today, I made a coconut cake to take to my parents. It uses my sponge cake recipe from my most recent trifle (linked below) - three layers of sponge cake! And itās frosted in a coconut buttercream. I need to tweak the frosting but I will definitely share my recipe soon! We also tried a local matcha popup today, Equitea. I got the lavender matcha latte and it was DIVINE. I canāt wait to return and try their other flavors.

And with glowing feedback like this comment, you definitely want to make this for your next spring soirĆ©e! This user wrote me and told me that the trifle was DEMOLISHED at a work event. I love that! We also almost demolished ours in one sitting (very proud of our restraint, it wasnāt easy ha!).
