Happy Monday. I’m a day late, but I made it!
Weekend Update
Gosh, so many things to update. It’s been a hectic weekend filled with delicious food that, unfortunately, ended on a sour note.
The good: I made SO much good food and have FOUR NEW RECIPES! I made a delicious beef pot pie, I perfected my beef lasagna, made a comforting pot of chicken and mushroom soup, and I made the most delicious garlic-Parmesan rolls.
I finally made it to Dok Khao Thai Eatery in Columbia and had an amazing meal! I ordered the lychee duck curry, and my husband ordered the crispy branzino with a spicy tamarind sauce. We also had an ube latte and the larb gai. The food was overall very good, though I wish everything had been a little spicier. Especially the larb gai. Larb gai is a Thai salad with ground chicken and toasted rice powder. It’s usually VERY fiery but brings a nice saltiness and sourness from lime juice, and it’s just the perfect combination. Dok Khao’s was good, but I missed the kick this time. The best version of larb gai I’ve had was at a restaurant in LA, Night + Market Song!
The fun part of dinner was the dessert! I ordered their Thai tea bingsu cake. Bingsu is a shaved ice dessert that originated in Korea. Dok Khao flavored theirs with Thai tea, topped with the most amazing cream cheese mousse and graham crackers. We added coffee jelly to it and LOVED IT! That said, I didn’t know what bingsu was when I ordered it, and based on the picture, I thought it was a sponge cake. When I read it was shaved ice, I was worried it would be too cold for me, so I also ordered their lychee cheesecake. I ended up LOVING the bingsu, so I took the cheesecake home and put it in the freezer for future sweet tooth cravings. Both desserts were delicious, but I was extremely impressed with the ube latte. They foam the milk perfectly. I recommend trying their desserts and coffee if you visit!
The bad: We lost our electricity last night, and it was SO cold! I’ve been embracing my medieval lifestyle with candles and lots of layers. Unfortunately, I think sleeping in the cold made me sick, so now I’m dealing with a bug! Or maybe it’s just coincidental timing, but I feel like I need to blame something, so I’ll blame the lack of heat and electricity.

Beef Lasagna
After much trial and error, I feel my beef lasagna is finally ready to be shared. I’m so proud of this recipe. I took it to my parents for a family dinner on Saturday, and they loved it, too! It’s made with both ricotta and béchamel, and it’s truly divine. We enjoyed it with my garlic-Parmesan rolls and a lovely side salad.
Beef Pot Pie
A flaky, buttery crust is paired with a hearty beef filling for the ultimate comfort dinner.
Garlic-Parmesan Rolls
My Never Fail Rolls are the base for this garlicky, buttery, cheesy iteration. They’re easy to make and would be a delicious accompaniment to your next pasta (or lasagna!) night. The dough rises for only two hours and bakes for only 20 minutes. These rolls are perfect for novices (hint: that’s me!) and experienced bakers alike!
Chicken and Mushroom Soup
A can of condensed cream of mushroom soup adds a nice, rich creaminess without being overly decadent.
