Happy Sunday. This weekend has been really rejuvenating for me, and I hope it’s been that way for you too! I have a little love letter to quesadillas, plus a reader's fave and a few recipes from the archives to share with you today.
My weekends have become increasingly routine-centered. I go to my classes on Saturday and Sunday mornings, I treat myself to a little coffee at a cafe, I watch my weekend movie at night, and I clean the house on Sunday. I also spend more time exploring creative dinner recipes that I don’t have as much time for during the week.
The Quesadilla Care Package
This weekend, I switched it up a little. My friend is recovering from surgery, so I took her a care package. Normally, I’m all about chicken soup as a recovery meal, but I went rogue with a big batch of chicken and cheese quesadillas.
Maybe quesadillas aren’t the most common post-surgery recovery food, but I think they deserve to earn a spot in the world of care packages. They’re easy to make, and you can individually wrap them in foil. Your friend can just chuck the whole thing–foil and all–in the air fryer or oven for a perfect fast snack. I use the fajita-sized tortillas, which make it a perfect single-serving meal.
I prepared the chicken breasts the night before by seasoning them with chili powder, cumin, garlic, paprika, cayenne, salt, and pepper. Then, I roasted them in the oven at 425ºF until they reached 165ºF. The next day, I simply shaved the chicken thinly and placed it on a flour tortilla in a hot skillet with freshly grated Oaxaca cheese. I added another flour tortilla on top, flipped it, and let it go until it turned golden brown. I wrapped each one individually in foil and toted them over with salsa, sour cream, and a bottle of Töst for us. She really liked them, so if you’re ever looking for something beyond soup to take someone who needs it, definitely try a batch of quesadillas! They were a huge hit. 🌞

Ok, that’s it for today! Next week, I’m working on a new pork chop recipe. I made it last week and absolutely loved it. It’s basically just pork chops that I pan-fried, and then I add chopped heirloom tomatoes around them and roast everything together. I serve it with crispy roasted potatoes, but I may experiment with that. It’s really good and so easy to make!
