It has been a minute since my last newsletter. Work got really hectic but guess what? I quit my darn job which means I’ll have tons more time to devote to working on my third cookbook and developing tons of new recipes and recipe videos and curating more products for the shop! It’s been really stressful, but I think I made the right decision. I’m really passionate about sharing good food and easy recipes with the world and I’m ready to dive into making that my full-time passion for now. Besides, I can always get another job later, right?! I hope, anyway!
Without further ado, let’s get into these recipes! I’ve been posting a lot to the site lately and to my Instagram and I have a lot of yummy meals to share with you on this gorgeous Sunday.
Creamy Sun-Dried Tomato Pasta
This recipe was featured on the Food52 Instagram feed and for good reason…but first, backstory! If you’ve been following me, you’ve probably noticed a lack of sun-dried tomato recipes. Quite candidly, I’ve always found them a bit too tangy for my tastes. All of that changed once I started carrying Klazzen’s sun-dried tomatoes. These beauties are harvested by hand and sun-dried on the tiny volcanic island of Pantelleria (on clear days, you can see Tunisia from this Sicilian island!). The result is a sun-dried tomato unlike any other that I’ve ever had. That said, if you have a favorite brand of sun-dried tomato, use them in this recipe and it will be just as delicious!
Spicy Shrimp and Potato Risotto
Yes, you heard me. I put potatoes in my risotto and I am not apologizing! They break down a bit as they cook, adding even more starchy richness to the risotto. Paired with spicy shrimp, this stuff is GOOD. Like, really good. And it doesn’t go light on the shrimp either. Most are chopped up and added straight to the risotto but a few are poached and doused in a lightly spicy butter sauce for the shrimpiest risotto ever.
Stewed Chicken with Charred Jalapeño Cream Cheese Sauce
This is a mid-week wonder meal. The stewed chicken is easy to make but the charred jalapeño cream cheese sauce takes it to another level. You can skip charring the peppers if you’re short on time, but that smoky, spicy, creamy finish is hard to beat!
Mexican Shredded Beef Tartines
This may be my new favorite way to enjoy shredded beef: piled high on a thick slice of toasted bread with melted cheese! Finished with avocado salsa and served with a simple salad, this meal is decadent without being too, too rich.
