Happy Sunday. It’s been over a month since my last newsletter; I know that is a long hiatus, but I took a little time off because my day job got busy (rude!). February is one of my least inspired months of the year, so I also blame my time away partly on the wintertime blues.
I have a few new recipes for you and a few reader favorites from the past month. But first, do you want to know what I am making tonight? Meatballs! Specifically, Sicilian-style meatballs with dry currants and pine nuts. I’ve been on a currant craze; I really enjoy eating them sprinkled on sunflower butter with apple slices. In meatballs, though, they are even better.
Sicilian-Style Meatballs
These meatballs remind me a bit of the meatballs I used to get at Frankie’s Spuntino when I lived in Brooklyn. They used raisins, so if you can’t find currants, feel free to make that swap instead.

Honey-Dijon Chicken with Dill
Who doesn’t love a midweek one-pot wonder? This little number uses economical chicken drumsticks and just a few other ingredients for a simple, satisfying dinner that everyone will love.
Spicy Crab Pasta
If you don’t want to splurge on crab, fear not. The anchovy-tomato sauce is simply divine on its own, so feel free to skip the crab or swap with shrimp instead.

Okay, I think that’s all for today. I have so many new recipes to finish developing…here’s a little sneak peek at what I’ve been cooking up.
The first image is an absolutely amazing rabbit ragù I made inspired by a dish I had at Rivertown Lodge in Hudson. I really wish I’d written down my recipe as I made it, but I didn’t. It’s somewhere up in the old noggin, so I’ll be making it again (and again) soon to perfect my recipe.
Next is a mustardy kale salad with golden raisins and chickpeas. The recipe is coming soon, I promise!
Finally, I made manchego risotto stuffed mushrooms from a big pot of manchego risotto that I made. It was loaded with sun-dried tomatoes, a few anchovies, and lots of manchego cheese. I finished it with a scallion-pine nut breadcrumb topping. It was bananas, and I cannot wait to do another round or three of recipe development on these two dishes!
