Happy Tuesday. Did you all have fun watching the eclipse yesterday? I was on the totality path, but unfortunately, it was so cloudy that I didn’t get any of the iconic eclipse views. Despite the clouds, everything got really dark, and it was still an amazing thing to experience.
I’ve received a lot of new comments on recipes, so I thought I’d pop in with a midweek newsletter to help inspire your meal plan for the week. I also mentioned in my last newsletter that I was making a version of my shrimp and pearl couscous recipe, which was a major hit! I also made a really beautiful cod that I will definitely be posting on the site once I make it a few more times.
This is fennel-tomato braised cod with Castelvetrano olive tapenade. I cooked thinly sliced fennel with shallots and garlic and then added sun-dried tomatoes and cherry tomatoes. I added a few thyme sprigs, a Parmesan rind, and a bit of water. I simmered this sauce for about an hour and gently mashed the tomatoes with a potato masher.
From there, I just added a few cod filets to the sauce and baked until they flaked easily with a fork. The cod was so buttery and delicious! I served it by placing a cod filet on a plate and spooning the sauce over it, with a small spoonful of the tapenade on top. I was so happy with how this turned out! I can’t wait to make it again and again.
