Happy Sunday! I’ve been keeping busy in the kitchen, and I have three new recipes to share today.
Pork Chops with Mushroom-Scallion Risotto
Rich, velvety, fragrant risotto pairs perfectly with lean center-cut pork chops. The recipe requires a bit of multitasking, but the final product is so very worth it.
Coconut Dashi Udon
This coconut dashi udon is beyond easy to make. Dashi granules make the broth a weeknight breeze, and everything else comes together in a flash. It’s a mild-flavored soup that you can zhuzh up with chili oil or shichimi togarashi for a bit of extra heat.
Gochujang Beef and Broccoli:
I love a good rice bowl for a quick dinner recipe, and this gochujang beef and broccoli bowl is a dream. You can use any protein in place of the beef–chicken, turkey, pork, or plant-based beef–and you can garnish it with whatever toppings you like. Chopped kimchi, radish kimchi, a fried egg, or scallions would be great. I kept it mean and green with roasted broccoli, avocado, and cucumber.
