Happy Sunday. Today, I have a few last-minute St. Patrickās Day recipes to share with you, as well as new recipes and a reader fave.

Weekend Update
I feel like Iāve been stressed out lately. Work has picked up significantly, but at the same time, I want to pour even more of myself into Tried & True and Exploring Vegan, and itās been challenging tackling everything all at once. At the same time, like the cute cat picture above, I find myself wanting some semblance of a social life. When I think about what makes me happiest, I keep wishing I could spend my days hosting cute dinner parties or luncheons to feed my friends tasty meals and treats. Yet, sadly, I am not a lady of leisure. Dang.
All that to say, Iāve been feeling even more excited about my work on these blogs and the direction I am moving with them!
Thatās a long way of saying I cooked a lot this weekend! I also test-drove a car! If you didnāt know this, our car was destroyed in an accident in 2018 after we were rear-ended on the highway. We live in a city and justā¦didnāt replace it. I donāt know why; maybe it was the ultimate procrastination of not wanting to deal with it. Our neighbors moved to Mexico City for work and entrusted their car to us while they were gone, so for the past 2 years, weāve been able to use it for short trips. Either way, for the past 7 years, Iāve had about a 2-mile radius of exploration, so Iām very excited to finally have my own car and maybe expand my radius to 3 or 4 miles š
Okay, letās get into some recipes now. Iām hungry, and Iām sure you are too!
NEW RECIPES
Irish Carrot and Cardamom Pudding with Cream Cheese Frosting
I just had to make a version of Irish Carrot Pudding with cream cheese frosting. I just had to. I also wanted to try a slightly different flavor profile, and I absolutely love carrots and cardamom together.
Now, if you read āpuddingā and think, āHey, that looks like cake.ā Itās because, in Ireland, pudding can be a broad term for dessert. Iāve found many of the pudding recipes Iāve tried from old cookbooks to be very texturally similar to zucchini bread as opposed to the more decadent, buttery cake texture you might expect. So consider this a cross between carrot cake and zucchini bread with orange-scented cream cheese frosting. Itās as easy as anything to whip up and perfect for a quick St. Patrickās Day treat, or maybe save it for Easter!
Turkey Enchilada Soup Recipe
Need a quick dinner for a busy work night? Make this ground turkey enchilada soup. It brings a ton of flavor with just a few ingredients.

This recipe has been getting RAVE reviews, and it makes me so happy! The prunes really add that special something-something that will make this stew a hit at your St. Patrickās Day dinner.
