Happy Sunday. Today, I have a few last-minute St. Patrick’s Day recipes to share with you, as well as new recipes and a reader fave.


Weekend Update
I feel like I’ve been stressed out lately. Work has picked up significantly, but at the same time, I want to pour even more of myself into Tried & True and Exploring Vegan, and it’s been challenging tackling everything all at once. At the same time, like the cute cat picture above, I find myself wanting some semblance of a social life. When I think about what makes me happiest, I keep wishing I could spend my days hosting cute dinner parties or luncheons to feed my friends tasty meals and treats. Yet, sadly, I am not a lady of leisure. Dang.
All that to say, I’ve been feeling even more excited about my work on these blogs and the direction I am moving with them!
That’s a long way of saying I cooked a lot this weekend! I also test-drove a car! If you didn’t know this, our car was destroyed in an accident in 2018 after we were rear-ended on the highway. We live in a city and just…didn’t replace it. I don’t know why; maybe it was the ultimate procrastination of not wanting to deal with it. Our neighbors moved to Mexico City for work and entrusted their car to us while they were gone, so for the past 2 years, we’ve been able to use it for short trips. Either way, for the past 7 years, I’ve had about a 2-mile radius of exploration, so I’m very excited to finally have my own car and maybe expand my radius to 3 or 4 miles 😜

Irish Carrot and Cardamom Pudding with Cream Cheese Frosting
I just had to make a version of Irish Carrot Pudding with cream cheese frosting. I just had to. I also wanted to try a slightly different flavor profile, and I absolutely love carrots and cardamom together.
Now, if you read “pudding” and think, “Hey, that looks like cake.” It’s because, in Ireland, pudding can be a broad term for dessert. I’ve found many of the pudding recipes I’ve tried from old cookbooks to be very texturally similar to zucchini bread as opposed to the more decadent, buttery cake texture you might expect. So consider this a cross between carrot cake and zucchini bread with orange-scented cream cheese frosting. It’s as easy as anything to whip up and perfect for a quick St. Patrick’s Day treat, or maybe save it for Easter!

Need a quick dinner for a busy work night? Make this ground turkey enchilada soup. It brings a ton of flavor with just a few ingredients.
