Happy Monday. Today, Iβm in your inbox with new recipes after taking a mini vacation. Itβs been over two years since my last trip, so it was really wonderful to disconnect for a few days. I visited my girlfriend, who recently moved to the Hudson Valley region.
She is one of my favorite people to cook and eat with, and she lives in this dreamy cabin in the woods with a gorgeous kitchen designed by her father. I told her she needed to write a cookbook so I could photograph all her meals in her beautiful space.
When I arrived on Friday night, she whipped up a few cocktails from a darling vintage cocktail recipe book she thrifted. P.S., this girl can sniff out the most amazing vintage finds; her house is filled to the brim with vintage furniture and amazing little vintage details!
Then, she prepared a gorgeous and GIANT pork chopβbased on my pork chop and pears recipeβwith braised red cabbage and fantastic mashed potatoes. The next day, I made us a quick lunch of sweet chili chicken bowls with shredded cabbage. I've eaten this for lunch every single day for the past week, and Iβll be sharing my recipe on the blog soon!
She took me to her favorite grocery store, Uncle Giuseppeβs, and I immediately fell in love. Their case of prepared food was stunning, and the gigantic pile of chicken cutlets almost made me shed tears of joy. I bought lots of olive oil and a fancy ricotta salata with black pepper. From there, we ducked into Hudson and shopped til we dropped. We rounded out the evening with a dinner at Feast & Floret. I didnβt get pictures of everything, but we did have a beautiful fluke crudo shown below.
The next morning, she effortlessly whipped up the most stunning meatloaf sandwich. And yes, there was a meatloaf sandwich for breakfast. If there isnβt a diner specializing in breakfast meatloaf and meatloaf sandwiches, there should be.
Needless to say, Iβm feeling reenergized and ready to cook now that I got a much-needed break. Iβm on PTO this week, so Iβll be making lots of tasty meals.
For now, Iβm sharing three new recipes with you. The first is a pork tenderloin recipe. I loosely based it on my pork tenderloin from my first cookbook, but for a more autumnal and zingy take, I added fresh ginger to the sauce. It gives it a nice kick that tastes perfect on a chilly night. I also have a shrimp in coconut broth recipe and a beef and spinach orzo recipe. I hope you try them and love them as much as I did!
