Happy Sunday. I hope you’ve had a great week and are relaxing on this first weekend of autumn. It’s rainy and dreary here, so I have soups and stews on my mind. It seems like the weather changed overnight, and we went from a hot, steamy summer to a chilly autumn faster than I’m used to. I’m not complaining though; I’ve been ready to change into my 24/7 sweater wardrobe since August.
Speaking of change, I impulsively decided to get bangs last week and have been sharing the saga on Instagram. Here’s the gist: I have never in my life been humbled as fast as I was during the 16 hours between my appointment and the next morning of settling into the reality of my new hair. For 16 hours, I completely and utterly basked in the warmth of all the compliments I got on my new look only to want to crawl into a hole the next morning. Did I go so far as to announce to all my coworkers that I would be off-camera for all meetings until my bangs sorted themselves out? Maybe…
Anyway, if you have any go-to bangs methods, send them my way, and I’ll trade you for the best autumn soup and stew recipes which just so happen to be below! :)
My Favorite Fall Soups & Stews:
Orange-Thyme Beef Stew
This orange-thyme beef stew is making waves again and for good reason. It’s comforting and aromatic with gorgeous citrusy undertones.
Mushroom-Barley Stew with Parsnips
This vegan mushroom-barley stew with parsnips makes the most of the lightly spicy flavor of parsnips. First, by adding them to the stew and then by transforming them into a crispy parsnip topping.
Chicken Enchilada Soup
This chicken enchilada soup recipe is a combination of big, bold flavors enveloped in the richest, savory chicken broth imaginable.
Easy Fish Stew Recipe
This fish stew is the perfect recipe for frozen tilapia, cod, whiting, or haddock. Piment d’Espelette–or smoked and sweet paprika if that’s what you have in your cabinet–transforms this easy meal into a Basque-style fish stew.
Chicken & Yellow Lentil Soup
By far one of the most comforting lentil soup recipes I’ve ever made, this chicken and yellow lentil soup will warm you up and soothe your soul.
Chorizo & Butternut Squash Soup
This easy chorizo and butternut squash soup is the perfect autumn soup recipe—simple to prepare and best eaten in a cozy room on a cold day. The rendered chorizo fat creates a super flavorful base for this spicy, hearty soup.
New Recipe!
Chili Crisp Shrimp & Green Beans
Easy, fast and so full of flavor! As the name suggests, I use chili crisp, which is a Chinese condiment of fried chili peppers and aromatics in oil. There are tons of brands on the market, like Lao Gan Ma. For my recipe, I used chili crisp from Some Daze called Tiger Chili Crisp. Use your favorite brand; there are so many to choose from, and each has its own unique flavor profile.
Okay, that’s all for now! If you decide to make one of my recipes, let me know how it turns out; I’d love to hear from you. 💕
