Happy Sunday. Today, I have some reader faves and a few of my faves from the archives to inspire your meals for the week.
Weekend Update
On Friday, I went to Medieval Times with a few of my friends and had a great time! It was such a fun way to spend an evening, even though we got the “bad boy” knight who kept causing drama. The food was wonderful, too! The half-roasted chicken was really juicy, and I loved the garlic bread and tomato soup. YUM.
Yesterday, I was feeling really tired, so I went out for a delicious Vietnamese dinner, and I came back and started my first iteration of the carrot cake upside-down cake that I’ve been promising everyone. The first attempt was far less difficult than I expected it to be, and the results were much better than I anticipated. My initial idea is to take the Persian-inspired carrot jam that I use in my carrot trifle (linked below) and use that as my “fruit layer” on top of a gorgeous saffron caramel. The cake is a spiced walnut cake that bakes on top of the carrot layer.
For the next round, I think I’ll try a layer of cream cheese baked between the carrot and cake, and if that’s weird, I’ll do a traditional cream cheese frosting on top. Regardless, the carrot jam is absolutely incredible, and as-is, the cake was really, really good. I’m so excited to get it right!
