Happy Sunday. Today, I have a few reader faves and recipes from the archives to inspire your cooking for the rest of the week. Grammy and I are watching the Bills right now, and Iām about to make a batch of Buffalo chicken tenders!
Weekend Update
This weekend has been so relaxing! Friday, I got dressed up and went to a local French restaurant. The food was amazing! We had mussels, chicken breast with zucchini and pistou, trout amandine, and a nice dessert. The dessert was some kind of cake with blackberries and maybe a white chocolate buttercream. I canāt remember because I was in heaven while eating it!
At home, I was inspired to try making trout amandine (trout with almond sauce). My complaint about the restaurantās version is that the skin wasnāt very crispy, and part of the filet was burnt.
The next day, I went to the grocery store and picked up four beautiful rainbow trout filets. To achieve the crispy skin, I dusted the trout with sweet potato starch-an ingredient Iāve used for the crispiest tofu and beautiful crispy shrimpāand it worked well! Unfortunately, I also burnt part of the filet (I was slightly more sympathetic to the restaurant, lol!), so I was miffed about that. It did taste amazing, but I didnāt use butter. Next time, Iāll need to try making the sauce with butter.
Despite the slightly burnt skin, it was still very delicious and I canāt wait to continue iterating on it to share a recipe with you soon. Sweet potato starch is truly my favorite secret weapon in the kitchen!
