Happy Sunday. Today, I have lots of new recipes, updated recipes, and a few reader faves.
Weekend Update
There isn’t anything too noteworthy to report on this weekend. I am having fun breaking out all the new autumn clothing pieces I’ve been purchasing over the last month or so! Are you enjoying the cooler temperatures? I sure am! Today, I got a manicure, which is always a treat. I’ve been loving burgundy everything!
I cannot believe we are just over a month away from Thanksgiving! Today, I’ll buy a turkey to test some new recipes over the next couple of weeks and perfect my dry-brine turkey technique. It seems like as soon as Halloween is over, I enter a time vortex and suddenly wake up in January. November and December just seem to fly by, so I am trying to savor these quieter weekends.
For now, I have lots of recipes to share with you for the week ahead. Let’s dig in.
New Recipes
Pork Tenderloin with Apples
This pork tenderloin with apples, fennel, and leeks is an easy autumnal dinner you’ll want to have on repeat this season.
Baked Chicken Thighs with Leeks
A simple dinner of baked chicken thighs layered with leeks and thinly sliced potatoes is a beauty for a midweek meal. It comes together (nearly) effortlessly. The leeks and potatoes cook in the chicken fat for a dish that brings much more flavor than you may anticipate.
Pumpkin Tomato Soup with Tortellini
This pumpkin tomato soup with tortellini is an easy autumnal soup that you can whip up for a quick meal on a cold night.
Slow Cooker Honey-Harissa Chicken
This slow cooker honey-harissa chicken has been a favorite in my house lately. It’s delicious with an irresistibly sweet and spicy sauce.
Update to a Classic
Easy Calabrian Chicken with Mozzarella
This recipe has been a reader favorite for over three years, but it desperately needed a new photo! This fiery and cheesy chicken is perfect for a side of risotto or served on a sandwich roll with your favorite toppings.
Reader Favorites
Chicken and Yellow Split Pea Stew
Thank you, Lynska! I love the idea of adding Cajun spice to this stew! Delicious! I’m so happy you enjoyed this comforting stew!
Shaved Fennel Salad
Thank you so much, Quinn! I’m happy this salad was a hit for you! I love how crisp pan-fried Brussels sprouts work with the thinly sliced fennel and the sweet and zippy vinaigrette.
I think that’s all for this week. I hope you all have a wonderful week filled with lots of tasty food. If you make one of my recipes, please drop a comment on the post to let me know how it turns out. I’d love to hear from you. Byeeeeeeee! 💖 💖
