Happy Sunday. After a short jaunt to Hudson, New York, I am getting back into the swing of things. I have a new recipe, and I’m digging up a few of my favorites from the archives to inspire your cooking this week.
A little trip
I had a nice time in Hudson. The first thing I did when I arrived? Pilates! Okay, actually, it was the second thing. The first thing I did was go to sleep because we got in so late. Then I woke up super early and scooted down to Rhinebeck Pilates Studio. I was hoping to work with the woman who owns the studio because she is a third-generation Pilates instructor, but our schedules didn’t line up.
Instead, I worked with a fantastic senior teacher. I learned a lot about myself, notably that I am very uptight (lol)! I’m trying to chill out and learn to relax when I move. I think I just get lost in the sauce of the mechanics, so it was nice getting feedback on how to stop doing that. I feel like I learned things about myself that I can apply to my everyday life, even beyond Pilates. She was gracious and took pictures of me working on the Cadillac. What a wild machine! The studio is really interesting because they have lots of Joseph Pilates’ original equipment that is still used today!
From there, I revisited a restaurant I really like, Rivertown Lodge Tavern! I had crispy oyster mushrooms, venison tartare, duck, pasta, and monkfish with gigante beans and garlic scapes. Everything was really delicious, particularly the monkfish. It reminded me of the trout I make with royal corona beans (I’ll link my recipe below).
The next day, I went to a farmer’s market and got pioppino mushrooms. I cannot WAIT to cook with them! I think I’ll make a nice mushroom risotto.
New Recipe
Tuna Salad with Golden Raisins
If there’s one thing about me, I will add golden raisins to ANYTHING. I just love them, and they’re particularly delicious in this tuna salad recipe.
Recipes from the archives
Seared Trout with Spicy Corona Bean Soup
It’s not exactly the same concept as what I had in Hudson, but big beans, fish…same-same but different! I really love this because you can use delicious summer tomatoes, and they pair perfectly with crispy seared trout and creamy royal corona beans. Yum!
Roasted Monkfish with Coconut Pumpkin Purée
Speaking of monkfish! If you have a can of pumpkin that you forgot to get to last autumn…why not have it in the summer? No one can stop you! It’s really delicious with the buttery monkfish.
Peruvian-Inspired Chicken Bowl with Potatoes
An homage to my favorite Peruvian restaurant recipes, this Peruvian chicken bowl with potatoes is a flavorful experience of contrasting textures.

Tonight’s Dinner: London Broil!
You might be able to guess what I’m making today….London broil! In the post, I promised to share my recipe for the true London broil marinade and I’m perfecting it today. Next week, I’ll share my recipe for it. It’s SO good and easy to make. It really makes for a tender, juicy, flavorful London broil. I haven’t decided if I like the marinated version or the simple salt-and-pepper version better…maybe you all will need to be the judge once I post my recipe! Wanna make the simple version? Recipe below!
I’ve been developing a recipe for a summer tomato and quinoa salad, which I’ll serve with my London broil tonight. I promise to share my quinoa salad recipe soon.
I will have so many new recipes to share with you next week, and I can’t wait to get back into my own kitchen and cook!
I hope you all have an amazing week filled with lots of tasty food. If you make one of my recipes, please comment to let me know how it turns out. I really love to hear from you and share your feedback in this newsletter! That’s all for now…byeeeeeeeeee! 💖 💖
