Happy Sunday. Are you excited for tomorrow’s solar eclipse? I’m in Rochester, New York, enjoying some beautiful weather, and I’ll be ready to see the eclipse in all its glory in my cute little special glasses. For now, though, I’m about ready to start cooking a big family dinner. I’ll make a version of my shrimp and pearl couscous that everyone loves, along with cod and maybe an olive tapenade. Yum!
Shrimp and Pearl Couscous
The version above is absolutely delicious, but I have a jar of sun-dried tomatoes, so I think I’ll modify it slightly because I always like to try new things. If you need a tried-and-true crowd-pleaser, definitely make the version I’m linking here. It’s so easy to make and just looks absolutely stunning at the table.

! In this simple pearl couscous recipe, I add white beans for a little bit of protein boost. I give the dish a spring vibe with the light, bright flavors of lemon and basil and a little sweetness from golden raisins and vegan honey.🌟 Reader Favorite 🌟
