Happy Souper Sunday. I hope you all had a great week and are feeling refreshed and ready for the week ahead. I am certainly not; I’d rather sleep in all week next week, but unfortunately, I’ll have to wait until my PTO the week after.
In the meantime, I have plenty of new soup recipes to carry you through the week plus a few reader favorites you may want to try.
First, I have new blog posts! I told you I was planning on keeping up with an actual blog, right?
First, I have my tale of tilapia. I made this last weekend, and now that I’m looking at it again, tilapia and creamy, dreamy basil gigante beans sound heavenly right about now.
Next, I thought you all might be interested in hearing how my toast brunch went. We had sweet toasts, savory toasts, and champagne toasts and it made for a really nice, low-key brunch party.
Today, I’ll be sharing my story of how I concocted the worst beef stew I’ve ever made, so check back later if you want to read a mildly devastating post. I still ate it for dinner last night…but I wasn’t happy. 😒
New Recipes
I have four new recipes to share with you. I think all of them are delicious, but I have to acknowledge my special fondness for the mushroom-potato soup recipe because it’s a throwback to a meal my Dad used to make for us growing up. Let’s dig in.
Mushroom-Potato Soup Recipe
This soup is a reference to an old-style Appalachian soup. You may be saying, “Pasta and potatoes? No ma’am.” At least, I’ve gotten several comments to that effect already. I encourage you to give it a go. It’s satisfying, comforting, and, honestly, the perfect thing you can eat on a cold winter day.
Chicken Meatballs in Arrabbiata Sauce
These herby chicken meatballs pair perfectly with piquant arrabbiata sauce. On a weekday, I reach for store-bought arrabbiata sauce, but feel free to throw together a homemade sauce if you feel up to it!
Saffron Chicken Noodle Soup
This recipe takes a humble rotisserie chicken and transforms it into a gorgeous, golden saffron chicken noodle soup. No saffron? No worries. Just add a little turmeric to get that golden color with a slightly earthier flavor.
Dashi-Marinated Pork Tenderloin Ramen
I recommend saving this one for Friday since it’s a bit more complex. The dashi-marinated pork tenderloin is a little sweet, super savory, and just a tiny bit spicy. It works perfectly with the salty, spicy ramen broth. The cherry on top? Shichimi togarashi sweet corn with plenty of fragrant scallions to tie everything together.
