Happy Tuesday. Recipes will slow down a bit this week because Iโm traveling to Hudson on Thursday! Fear not; I have a few new recipes to share with you, plus a couple of reader faves from the archives. Letโs dig in.

Chicken Tortilla Salad
This is what we may call a maximalist salad ๐ Itโs big, itโs bold, itโs creamy, itโs loaded with a bazillion ingredients. But I *love* it. Plus, you can modify it as you like with as few or as many ingredients as you have on hand. I love it with lettuce, radishes, cucumbers, tomatoes, avocado, roasted black beans and corn, tortilla chips, and chopped chicken thighs!
Easy Baked Chicken Thighs
Speaking of chicken thighs! If you donโt want to fuss with a salad, you can still make the chicken thighs and serve them with whatever you like. Shred them up and use them in place of a rotisserie chicken in my rotisserie chicken tacos, serve them with black beans and rice, or with cilantro-lime roasted potatoes. Stuffed into a big chicken and cheese quesadilla is also a very, very acceptable option.
