Happy Sunday. Today, I have reader faves and a few ideas from the archives.
Weekend Update
Nothing too noteworthy to update about this weekend! Work was busy last week, so I mostly spent this weekend decompressing. I didn’t cook anything to write home about. I’ve been getting ads on TikTok for this restaurant about 30 minutes away from me that has a DOC margherita pizza, meaning it adheres to certain Italian food guidelines, specifically around preparation and ingredient sourcing. It’s also certified by Associazione Verace Pizza Napoletana (AVPN) for authentic Neapolitan-style pizza.
The pizza was AWESOME. The restaurant, however, was not a vibe as they say. I definitely would see myself getting the pizza again and just eating it in my car, lol. If you find yourself in Columbia, MD, definitely get the margherita from Puputella!
Let’s get into a few recipes you can make this week!

FROM THE ARCHIVES
Seared Salmon with Horseradish Potato Salad
This seared salmon with warm horseradish potato salad is the perfect comfort dinner recipe. A sprinkle of dill adds the perfect finish!
Roasted Red Pepper Chickpea Soup
This vegan roasted red pepper chickpea soup is only a few ingredients, but doesn’t sacrifice flavor. Hummus is our secret weapon in this plant-based soup recipe.
Spicy Calabrian Chicken Meatballs
Calabrian peppers add incredible heat, but these chicken meatballs are moist and delicious. Finished with mozzarella, you can serve these meatballs on subs or with cooked pasta or enjoy them on their own.
Vegan Tahini Miso Udon
The broth is just a few ingredients and the combination of tahini, miso, and chili oil makes the most luxuriously creamy vegan udon broth.
Ginger Beef Stir-Fry
This ginger beef stir-fry is filled to the brim with tender beef, velvety sauce, and tons of tender-crisp veggies. It makes for a perfect weeknight dinner.
Chicken Parmigiana with Brown Butter Marinara
I rarely make chicken Parmigiana because of how labor-intensive it is, but this recipe with brown butter marinara makes all the work worthwhile. It’s a perfect way to use ripe summer tomatoes, too!
Parmesan Zucchini with Lemon-Dill Rice
This parmesan zucchini with lemon-dill rice is creamy, bright, herby, and perfect for a quick weeknight dinner.
That’s it for this week! Hope everyone has a great week ahead filled with lots of tasty food. If you make one of my recipes, drop a comment on the post to let me know how it turns out; I’d love to hear from you. Byeeeeee! 💖💖
