Weekend Update
What a yucky weekend. Rainy! Dreary! Cold! I have just been curled up on the couch as much as possible this weekend, but I did go out to try a local cafe’s autumn drink specials yesterday. I tried the plum matcha tonic (delicious) and the blueberry lemon latte (amazing). At first, I thought I liked the matcha tonic the most, but as I drank the latte, I think I'd give the edge to that delicious blueberry flavor. So delicious!

Because it was so cold, I had to shift around my meal plan. I was going to make chicken soup later in the week, but I decided to make it yesterday instead. I added a can of condensed cream of chicken soup (similar to my mom’s chicken corn soup, linked below) for an extra rich, salty flavor. It was exactly what I needed for yesterday’s cold weather.
Tonight, I’m making shrimp bún, and I already made my pickled veggies for it. I can’t wait! I make a very simple sweet and spicy lemongrass shrimp that tastes so good with homemade nước chấm.
