Weekend Update
This weekend, I was up to my ears in cooking! I’m developing lots of new St. Patrick’s Day recipes based on all these amazing vintage cookbooks I found, and I’m so excited to share them with you. I made scallion champ, Guinness shepherd’s pie (with a twist based on an old-style beef stew technique I read about in another Irish cookbook!), Irish beef stew, homemade Irish creme, and the most amazing Guinness cupcakes with Irish Creme Buttercream Frosting.
If you’re wondering “how does she eat ALL this?!” the short answer is, I don’t! Of course, I eat a lot of it, but when you make multiple entrees and desserts and side dishes, it can be hard to get through all of it…try as we might! So, I made the rounds via text message to find out who wanted what, and my neighbor laid claim to the shepherd’s pie. I can’t give you all the details yet, but based on her reaction to it, I think you’ll love this recipe too! And no, the answer is not figs! 😜
After all that cooking, I treated myself to a cocktail at a local bar. It was SO good. I wish I could remember everything that was in it. I think it was whiskey with orange, lime, pineapple, and chocolate?! I can’t remember everything, but it was DELISH!
Today, I’m continuing the cooking extravaganza. I’m making the cutest St. Patrick’s Day Pistachio Trifle with homemade sponge cake, and I’m about to go make my boxty cakes now! I also have mint chocolate chip cupcakes on the horizon along with a yummy carrot pudding.
I’m really excited about all these new recipes, and I hope to have them on the website ASAP so you can prepare for a magical St. Patrick’s Day feast this year! ☘️
