Weekend Update
This weekend, I was up to my ears in cooking! Iām developing lots of new St. Patrickās Day recipes based on all these amazing vintage cookbooks I found, and Iām so excited to share them with you. I made scallion champ, Guinness shepherdās pie (with a twist based on an old-style beef stew technique I read about in another Irish cookbook!), Irish beef stew, homemade Irish creme, and the most amazing Guinness cupcakes with Irish Creme Buttercream Frosting.
If youāre wondering āhow does she eat ALL this?!ā the short answer is, I donāt! Of course, I eat a lot of it, but when you make multiple entrees and desserts and side dishes, it can be hard to get through all of itā¦try as we might! So, I made the rounds via text message to find out who wanted what, and my neighbor laid claim to the shepherdās pie. I canāt give you all the details yet, but based on her reaction to it, I think youāll love this recipe too! And no, the answer is not figs! š
After all that cooking, I treated myself to a cocktail at a local bar. It was SO good. I wish I could remember everything that was in it. I think it was whiskey with orange, lime, pineapple, and chocolate?! I canāt remember everything, but it was DELISH!
Today, Iām continuing the cooking extravaganza. Iām making the cutest St. Patrickās Day Pistachio Trifle with homemade sponge cake, and Iām about to go make my boxty cakes now! I also have mint chocolate chip cupcakes on the horizon along with a yummy carrot pudding.
Iām really excited about all these new recipes, and I hope to have them on the website ASAP so you can prepare for a magical St. Patrickās Day feast this year! āļø
