I can’t get over how good this pork tenderloin with risotto tasted! It’s even better because everything happens in just one skillet in the oven. The risotto is creamy, and you don’t even have to babysit it on the stove. My kind of meal! I can’t wait to develop even more versions of this…baked chicken with sun-dried tomato risotto is calling my name. For now, this version is going in my regular rotation because I’m craving it again already.

Definitely make this while we’re in peak asparagus season!
