Happy Saturday. I’m having a great weekend and hope you are, too! My weekend is so great because I’m on PTO next week, which means I get to sleep in extra late every day next week. I can’t wait.
Last week was a lot of cooking and hanging out. In the photo on the left, I am prepping the rabbit for my rabbit ragù recipe, which I’ll share below.
On the right, I am in my happy place–drinking coffee at a cafe before my Pilates class. My friend happened to catch me through the window as she was making her way in. We try to meet up before class to chitty-chatty about our days before we head to the hot room to sweat like crazy!
I was talking to my dad on the phone the other day, and he said, “I don’t know how you cook every day…” And honestly, I don’t know either. I don’t really go out to eat often, but I DO love going out for coffee…maybe a little too much!
My only other life update…I am planning to have a photo shoot in April! If you follow me on Instagram, you know I’ve been on a little bit of a health journey. I’ve more or less reached my goal, and I wrote about my experience with hiring a coach in addition to the mental health component of the journey on Instagram. If you’re interested in learning more, you can click the post below.
The photo shoot is sort of a gift to myself for going on the journey and sticking with it. But I’m nervous because I need new clothes for the photo shoot! I get to have three outfit changes, and I’m thinking about trying Nuuly for the first time. Has anyone used it? If you have, I’d love to know your experience!
Okay, enough life updates. Let’s get on with the recipes.
New Recipes
Rabbit Ragù
This recipe comes with an apology to the Easter Bunny! 🙈 That said, rabbit is simply fantastic when it’s cooked low and slow in a spicy tomato sauce. It’s even better with added richness from Parmesan cheese.
Chicken and Kohlrabi Soup
Kohlrabi deserves its moment in the sun. And by sun, I mean chicken soup—specifically, this chicken soup. It’s loaded with veggies and homemade chicken broth, and kohlrabi adds just a delicious little peppery bite. If you’re dealing with rainy, windy weather like I am, definitely add this comforting soup to your meal plan.
Sweet and Spicy Pork Fried Rice
This pork fried rice is an easy little number that you can make any day this week. No leftover rice? No problem. The full post will tell you how you can use a pot of fresh rice to get delicious fried rice every time!
🌟 Reader Favorites 🌟
Smoky Brothy Beans
These smoky, brothy beans remain a reader favorite! Easy to make and so comforting. I’m so happy you enjoyed them, Jennifer!
Simple Shrimp and Bay Scallops
This is my most searched recipe today, and I was reminded of this wonderful comment from 2022. Thank you so much, Beth! These shrimp and bay scallops are delicious and work so well with rich, buttery beans.
Okay, that’s all for today. I hope everyone has a wonderful weekend filled with lots of tasty food. If you make one of my recipes, let me know how it turned out by dropping a comment below or on my site. Have a great weekend, everyone…byeeeeeee! 💖 💖
