Happy Friday. I hope everyone had a wonderful and restful Thanksgiving yesterday. Today, I’m in your inbox to share a few of my favorite Thanksgiving leftover dishes to help you cook through the nine million Tupperware containers in your fridge!
Here I am with my turkey from yesterday. I made the full spread, including caramelized onion dressing, mashed potatoes, green bean casserole, sweet potato casserole, sweet potato confit, cranberry sauce, and homemade turkey neck gravy. I also made homemade pumpkin bars, and my dad made rolls.
My dad said the mashed potatoes were the meal's highlight, and you know, I was proud of them! I’ve always tended to make overly decadent mashed potatoes, but I forced myself to pull back on the milk and cream, which was perfect. They were fluffy but structured and decadent without being overly rich.
Everyone was also a fan of the sweet potato confit. A few days ago, I treated myself to a Breville Smart Oven Air Fryer thing, and saying I am obsessed would be an understatement. I was able to make the confit in the Breville, and it worked perfectly. I’ve used the air fryer function once or twice, and I’ll be excited to be able to develop air fryer recipes finally!
Oddly enough, I’m most excited about the toaster function. I got hungry at, like, 1 AM last night, and there was something very pleasing about watching the roll toast up with cheese. It made me feel like I was at a bakery, but maybe that was the hot toddy talking, ha! Speaking of hot toddies…have you ever made my hot toddy with charred orange? I’ve been making them all week (it’s a holiday, after all), and it’s so good for a cold night!
