Happy Monday. I hope everyone had a great weekend! Iโm in your inbox with a few reader favorites to inspire your dinner tonight. But first, my little weekend update.
This weekend was extra busy for me because it was my husbandโs birthday celebration. So, on Saturday, I had fun getting all dressed up to go out to eat with my in-laws at Sotto Sopra. Itโs one of my favorite restaurants in Baltimore, and we always have a great meal there! I had the cioppino that they serve in a really nice lobster broth.
On Sunday, we saw the Orioles play (and lose) against the Rays. Then I hustled home and threw together dinner! I made my favorite crowd-pleaser, baked sun-dried tomato chicken. I served it with mushroom risotto, following the gist of my mushroom-Taleggio risotto recipe. I didnโt have Taleggio cheese this time, so I just did twice the amount of Parmesan. I also made a homemade red velvet cake, which turned out delicious but lopsided as usualโฆone day, Iโll get it right!
For now, Iโm here to share a few reader favorites with you. Iโve gotten a lot of comments the past week which I appreciate so much. I always love to hear how recipes turn out when you make them!
This week will be a bit slower with recipes because I have to have dental surgery to remove my dumb little fibroma lump from my gum, so only soft foods for a bit. Argh!

Vegan Roasted Poblano Corn Chowder
Thank you so much for your comment, Priyanki! This vegan roasted poblano-corn chowder takes a little bit of prep, especially if youโre using fresh ears of corn, but itโs worth the work. The flavors of the smoky, roasted poblano paired with sweet summer corn and coconut milk make for an incredible soup.
Calabrian Chicken with Mozzarella
Thank you, Brittany! Iโm so thrilled you enjoyed this one. I actually just got another jar of Calabrian chili peppers, so I can make this recipe again, too!
Simple Shrimp and Bay Scallops
Thank you for the wonderful comment, Cindy! And for finding a little typo in the recipeโฆwe made it even clearer and better for the next person who makes this! Iโm happy you enjoyed this dish as much as I did!
Pearl Couscous with Mushrooms
Thank you, Sarah! This is one of my favorite sides that goes perfectly with plant-based protein (like Meati Classic Cutlets), your favorite meat protein, like the sun-dried tomato chicken I shared above, or with sausage links or baked chicken thighs.
Thatโs all for today. I hope everyone has a wonderful week ahead. If you make one of my recipes, drop a comment on the post (you can comment anonymously now!) or respond to this email directly to let me know how it turns out. Iโd love to hear from you. Okay, byeeeeee! ๐

Wow! I live in Balty and I havenโt visited that place yet. Usually when we crave seafood we are basic and head to Thames. Iโll have to check it out!
