Happy Thursday. I hope you all had a restful Memorial Day Weekend. I know I’m happy it’s a short week!
I’ve been a little slower with recipe development, but I’m here with a new recipe and a few reader favorites.
Today’s new recipe is based on one I developed for (I’ll link it below), and it features zucchini! We’re getting into the time of year when zucchini starts to pop up in abundance, and my favorite way to use it is in pasta sauce!

Zucchini Parmesan Pasta
This is a really easy pasta that highlights the beauty of one of summer’s most bounteous veggies: the zucchini! I feel like everyone ends up with a 5-pound zucchini at one point in the summer, and if you’re over zucchini bread, this pasta is for you. The zucchini cooks down with onion, chickpeas, and scallions and then I pour over a mixture of Dijon mustard, lemon juice, Parmesan, and olive oil. Mashing the chickpeas as they cook also creates a nice thick sauce that coats capellini pasta perfectly. It’s really a wonderful summer pasta.
