Happy Friday. I am mad because I was clearly too early in sending my favorite summer recipes a few days ago. Maybe that newsletter jinxed the weather since the temperatures immediately dropped, and now it’s rainy and dreary. Sorry if I ruined your weekend plans!
Now, I’m thinking about comfort meals that can be made in one-pot or just plain old comforting casseroles. I’ve compiled a few of my favorites but first…some updates! Unfortunately, I have no new Etsy finds to kick off this email, but I do have some fun little updates, including a new cooking vessel.
May’s Meal Plan:
The May meal plan is finished, and I’m just putting the finishing touches on the PDF. It’s filled with five really, really good recipes that are perfect for weekday cooking and will help you reuse ingredients across multiple meals.
I’ll be sharing this plan on Sunday. The recipes above have been developed especially for this meal plan and will not be shared publicly on my website or Instagram. They’ll also be bundled up with a handy interactive shopping list.

My new tagine!
While I don’t have any fun Etsy finds today, I do have a beautiful new tagine to introduce you to! This was gifted to me by Casablanca Market, and I can’t wait to use it! It’s going to take a while before I can make my first meal in it, though, because it has to be cured before the first use. I have to soak it in water for 12 hours, then I will air-dry it for up to 72 hours, and then it gets a nice coating of oil and will be cured in the oven over low heat for 2 hours.
The even better news? I’ll be launching a giveaway with Casablanca Market next week on my Instagram to give one of these beauties away! This was one of my favorite things to eat as a kid. I relished Johnny Marzetti day at school, so I had to develop my own version of this classic Italian-American comfort meal.
One-Pot Chicken and Saffron Rice
One of my most popular recipes, this one-pot chicken and saffron rice is easy to make and gets a little sweet boost from fig jam! You can also use chopped figs, dry dates, or even apricot preserves.
Orange-Thyme Beef Stew
Low and slow is the name of the game on a rainy, dreary weekend. This orange-thyme beef stew will make your whole house smell like a dream, and you’ll forget it’s even raining outside.
Manicotti
I’m not going to kid you; this recipe is time-consuming, but whew, it’s so worth it. It’s pure comfort, and the spinach-cheese filling is perfection.
Creamy Tomato Chicken Soup
Heaven in a bowl! It’s creamy, and spicy, and makes use of mostly pantry staples for the easiest cozy dinner ever.
