Lately, I’ve been in the habit of roasting split chicken breasts and chicken legs on Sunday. I’ll eat the chicken legs for dinner–usually with roasted potatoes or sweet potato purée–and save the breasts to use later in the week, either diced up in salads or served in a simple chicken wrap with oregano and tzatziki sauce. I thought I’d share a few of my favorite chicken recipes deep in my archives to celebrate my go-to protein choice
