Happy Tuesday. It may be gray and dreary outside, but that doesn’t mean we can’t pretend that we’re having nice spring-almost-summer weather with our meals inside, right?
I hate to complain, but it has felt like the gloomiest spring I can remember in recent history, at least in Baltimore. Today, I aim to brighten up your inbox with a few dishes that make me think of summer. Fear not; if the gray weather has you craving soups and stews, I have a comfort meal or two tucked in below.
1. Vegan Quinoa-Corn Chowder
My most searched recipe today is this beautiful quinoa-corn chowder. It’s easy to make and–most importantly–loaded with flavor.
2. Rotisserie Chicken Tacos
It is Taco Tuesday, after all!
2. Lemon-Basil Squash Pasta
It’s bright and zippy, and the squash adds a really nice subtle sweetness to the pasta.
3. Steak Fajitas
You can never go wrong with steak fajitas! I serve mine with an avocado mango slaw, but guacamole or simple, diced avocado works nicely, too.
4. Aleppo Pepper Shrimp with Creamed Corn
This Aleppo pepper shrimp with creamed corn is the best of summer on one plate. It’s filled with creamy sweet corn, juicy shrimp, and burst cherry tomatoes.
5. Easy Tomato-Basil Pearled Couscous
This easy tomato-basil pearled couscous combines the classic flavors of summer tomatoes, basil, and delicious, creamy fresh mozzarella cheese.
6. Honey-Chipotle Chicken and Rice
You’ll serve these juicy chicken legs with cooked vegetables–like bell peppers and mushrooms–braised in an incredible honey-chipotle sauce.
7. Pan-Seared Tilapia Salad
A quick lil salad for two. Tilapia is seasoned simply with salt, pepper, and paprika and served on a bed of greens and crisp vegetables with a gorgeous herby dressing.
8. Fish Salpicón
I made this last night, and I’m having leftovers tonight! This fish salpicón recipe is one of my top three favorite recipes from my site. It never ever fails, and I think you’ll love it as much as I do.
9. Weeknight Chicken Soup
Gloomy weather have you craving something more comforting? Whip up a pot of this weeknight chicken soup. It’s easy, breezy, and perfect for a rainy day.
10. 5-Ingredient Chicken Noodle Soup
This 5-ingredient chicken soup recipe is perfect for a cool spring day, though you can modify it with any seasonal vegetable and serve it year-round.
New Recipe from
Vegan Thai Basil Macaroni Salad
Zippy, creamy, and spicy, this is not your mama’s mac salad recipe.
Okay, that’s all for today. Hope you have a great week filled with tasty food! If you make one of my recipes, be sure to drop a comment to let me know what you think. I’d love to hear from you. Byeeeeeeeeeee! 💖
